Quesabirria Tacos
You seriously have to try these!
I randomly came across this recipe while scrolling through my Facebook feed (thank you and credit to Simple Cooking Recipes for the recipe and photo) and I am SO glad I did. Before we jump into the recipe, a couple of notes. 1- As easy as this is, it DOES take time so plan ahead. 2- I love using Chihuahua brand Mexican melting cheese (similar in taste to a monterey jack). If you are or have people that are cheese averse, you can use whatever kind you like, or none at all, it seriously doesn’t need cheese! Without further ado, the best taco recipe I have ever made:
Ingredients
2 lbs brisket (or beef chuck roast) cut into 1-inch cubes
5 garlic cloves, crushed
1 white onion, roughly chopped
2 bay leaves
1 tbsp cumin
1 tbsp oregano
1 tbsp chili powder
1 cinnamon stick (I didn’t have any sticks left so I used a pinch of ground cinnamon)
salt and pepper to taste
Beef Broth (I ended up using 4 cups)
Corn or Flour tortillas
Instructions
Season the beef cubes with salt, pepper, cumin, oregano, chili powder. Add to a pot with the garlic, onion, bay leaves, and cinnamon stick. Add enough beef broth to cover the meat.
Bring to a boil and then reduce the heat and simmer for 2-3 hours until the beef is very tender.
Remove the meat from the liquid and shred, throw out bay leaves and cinnamon stick. RESERVE THE LIQUID!!
At this stage you have a couple of options. I put the shredded meat back into the liquid to absorb it but the original recipe said the use it to dip the tortillas in to soften them. I knew I was going to pan fry my tortillas with the meat and melting cheese so I didn’t want to soak them in the broth.
Spread a thin layer of butter on one side of the tortilla (flour in my case), fill with cheese (or not) and meat, fold the tortilla in half and cook over medium high heat. Cook until golden brown and flip. Once both sides are done, remove from heat and add whatever additional toppings you want. I used avocado, chopped cilantro, and a dab of sour cream with some Sriracha mixed into it.
